Along with Broccoli Casserole, a squash casserole is one of my favorite side dishes.

Squash Casserole with Stuffing Top Recipe

This recipe is a wonderful way to turn yellow squash into a hearty side dish that pairs well with everything from Fried Chicken to Baked Ham. Best of all it uses simple ingredients and takes just 30 minutes in the oven.

In addition to squash and sweet onion, this Squash Casserole with Stuffing Top also has shredded carrot for a little color and extra flavor. A can of condensed cream of chicken soup makes it really creamy and hearty. Cream of Mushroom soup could be used instead.

American cheese slices are place on top of the squash. They melt and provide a mild cheese flavor and lots of creaminess.

To finish it off, a buttery stuffing layer adds so much flavor. It’s such a filling casserole it could be eaten as a main dish. In fact, you could add some shredded chicken and you would have a delicious main dish casserole.

Recipe Tips

  • Don’t overcook the squash. I like to steam the squash and onions before adding them to the casserole since it only bakes for 30 minutes. Just until they are crisp-tender. This ensures they will be tender and soft in the finished dish, but still have some texture.
  • Drain the squash well. Yellow squash contains a lot of moisture. After steaming, drain it thoroughly and dry it with paper towels to help prevent a watery casserole.
  • Try a combination of squash. Use a combo of yellow squash and zucchini to make it more colorful.
  • Customize the condensed soup. Condensed Cream of Mushroom or Cream of Celery Soup can be used instead of Cream of Chicken.
  • Watch the topping as it browns. Bake uncovered so the stuffing can brown. If it needs more color, allow a little more baking time.

Can I Make Squash Casserole Ahead Of Time?

Yes! The casserole can be completely assembled ahead of time and refrigerated until ready to bake. I recommend adding the stuffing just before baking so it doesn’t get soggy.

Storage

Leftovers will keep for about 4 days in an airtight container in the refrigerator. Reheat in a 350 degree oven to het the stuffing crispy again.

Notes

I use Pepperidge Farm Herb-Seasoned Stuffing. Stovetop stuffing also works.
Use dry stuffing mix. Do not make the stuffing according to package directions.
Just steam the squash until crisp-tender. It will continue to cook in the oven.
