One-Pot Chicken Spaghetti

This one-pot chicken spaghetti is everything you love about the classic, with a creamy, cheesy sauce and tender, seasoned chicken in every bite. The difference is how it all comes together. Instead of boiling the noodles separately, the spaghetti simmers right in chicken broth and heavy cream along with browned chicken, onion, garlic, and Rotel. All that pasta starch stays in the pot, so once the cream cheese, sharp cheddar, Monterey Jack, and Parmesan melt in, you get a velvety sauce that hugs every strand. There’s no canned soup, no colander, and no casserole dish required. It’s cozy and rich, with just a little zip from the green chiles, and it’s exactly the kind of dinner I reach for on a chilly weeknight or when I’m feeding a hungry crowd.

Chicken Spaghetti Like You Remember, Just Better

Chicken spaghetti is one of those dinners that just feels like home. I grew up with the chicken spaghetti casserole version that always started with a can of cream of mushroom or cream of chicken soup. I was determined to create a version with fresh ingredients that keeps all the ease and simplicity of the recipe we all grew up with.

I’ve made a lot of versions over the years, but I wanted one that was truly a one-pot dinner. Most chicken spaghetti recipes cook the pasta separately and then combine everything in a casserole dish, and I wanted to see if I could get that same creamy, cheesy result completely on the stovetop. Cooking the spaghetti directly in the chicken broth ended up being the key. Instead of draining all that pasta starch away, it stays right in the pot and becomes part of the sauce. The chicken, Rotel, onion, and garlic all cook with the pasta, so every bite picks up the same savory flavor.

I tested the cheese combination with the same goal in mind. I wanted it creamy and cheesy without one cheese overpowering the rest. Sharp cheddar gives the sauce that familiar chicken spaghetti flavor, Monterey Jack keeps it smooth and melty, and Parmesan adds a little saltiness and depth to round it all out. Using chicken tenders keeps the chicken tender too, and it’s seasoned all the way through.

As a mom of four, recipes like this are essential to have in my back pocket. It takes about 10 minutes of prep and 30 minutes on the stove, and it makes 8 hearty servings. It uses ingredients I can easily keep on hand, and everything happens in one pot, which means no sink full of dishes waiting for me after dinner. You’ll know it’s done right when the sauce looks thick, glossy, and creamy, with just a little heat from the Rotel to keep it from feeling too rich. If it looks a little loose when you turn off the heat, don’t worry. It thickens up quite a bit as it rests.

Do I Need Cream of Chicken Soup?

Nope, and you won’t miss it. Classic chicken spaghetti leans on a can of condensed soup to make it creamy, but this version gets the same rich texture from three simple things working together.

  • Pasta starch. Because the spaghetti cooks right in the broth and cream, its starch stays in the pot and naturally thickens the sauce.
  • Heavy cream and cream cheese. The cream adds body while the pasta cooks, and the cream cheese melts in at the end for that velvety, tangy finish.
  • Freshly shredded cheese. Sharp cheddar, Monterey Jack, and Parmesan melt smoothly into the starchy base for a sauce that’s cheesy without being greasy.

The result tastes like the chicken spaghetti you remember, with a fresher flavor and a creamier texture. If you love the baked casserole style with a crispy topping, try my Baked Chicken Spaghetti instead.

Tips for Beginners

  • Keep it at a gentle simmer. This is the most important step in the whole recipe. A hard boil makes the liquid cook off before the spaghetti is tender, and that’s how one-pot pasta ends up dry, sticky, or gummy. You want small, steady bubbles around the edges of the pot. When the heat stays gentle, the pasta cooks evenly and releases its starch slowly into the broth, which is exactly what makes the sauce so creamy.
  • Stir every couple of minutes and don’t rinse the pasta. Spaghetti loves to clump together and stick to the bottom of the pot when it cooks in a small amount of liquid. A quick stir every 2 minutes keeps the strands separate and cooking at the same rate. And since the starch is what helps the sauce cling to every strand, never rinse or drain anything. All of that goodness belongs in the pot.
  • Shred your own cheese and add it over low heat. Pre-shredded cheese is coated with anti-caking powders that keep it from melting smoothly. Freshly shredded cheese melts into a silky sauce instead. Turning the heat down to low before the cheese goes in matters just as much, because high heat can make cheese sauces turn grainy. Add the cheese a handful at a time and let each one melt before adding the next.

  • 1 cup heavy cream
  • 16 oz. spaghetti
  • 2 tbsp butter
  • 8 oz. full-fat cream cheese cubed
  • 1½ cups freshly shredded sharp cheddar
  • 1 cup freshly shredded Monterey Jack
  • ½ cup freshly grated Parmigiano-Reggiano

Instructions

  • Heat the olive oil in a large, heavy-bottomed pot over medium-high heat. Season the chicken with the salt, garlic powder, onion powder, Italian seasoning, smoked paprika, and black pepper.
2 lbs boneless skinless chicken tenders, 1 tbsp olive oil, 1 tsp kosher salt, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp Italian seasoning, ½ tsp smoked paprika, ½ tsp black pepper
  • Add the chicken and cook for 4-5 minutes, stirring occasionally, until lightly browned and almost cooked through. Transfer the chicken to a plate and set aside.
  • Add the onion to the same pot and cook for 3-4 minutes, until softened. Add the garlic and cook for about 30 seconds, until fragrant.
1 medium yellow onion, 1 tbsp minced garlic
  • Pour in the Rotel with its juices and stir for about 1 minute, scraping up the browned bits from the bottom of the pot.
1 10 oz. can Rotel diced tomatoes with green chiles
  • Add the chicken broth and heavy cream. Stir and bring to a gentle boil.
4 cups low-sodium chicken broth, 1 cup heavy cream
  • Add the spaghetti, pressing it under the liquid as it softens. Cover and cook at a gentle simmer for 10-13 minutes, stirring every couple of minutes, until almost al dente.
    16 oz. spaghetti
  • Reduce the heat to low. Add the butter and cream cheese and stir until melted and smooth.
2 tbsp butter, 8 oz. full-fat cream cheese
  • Stir in the chicken and any juices from the plate. Cook for 2-3 minutes, stirring gently, until the chicken is cooked through.
  • Stir in the cheddar, Monterey Jack, and Parmigiano-Reggiano, letting each addition melt before adding the next.
1½ cups freshly shredded sharp cheddar, 1 cup freshly shredded Monterey Jack, ½ cup freshly grated Parmigiano-Reggiano
  • Let the pot rest off the heat for a few minutes so the sauce can thicken. Serve topped with parsley, green onions, extra Parmesan, and cracked black pepper.

Notes

  • The pasta needs liquid to cook through, and a rolling boil evaporates it too quickly, so keep the pot at a gentle simmer the whole time the spaghetti cooks. This is the difference between a creamy sauce and dry, gummy noodles.
  • Spaghetti cooked in a small amount of liquid tends to clump and stick, so stir every couple of minutes while it simmers. It also helps the strands cook evenly.
  • The starch from the pasta is what makes this sauce creamy, so never rinse or drain the spaghetti. Everything stays in the pot and becomes part of the sauce.
  • Pre-shredded cheese has coatings that keep it from melting smoothly, so shred the cheese yourself for the silkiest sauce. Adding it over low heat keeps it from turning grainy.
  • The broth, Rotel, and cheeses all bring plenty of salt, so taste before adding any more salt at the end. Using low-sodium broth helps keep this in check.
  • Original Rotel has a mild kick that most kids handle well. If you’re cooking for spice-sensitive eaters, use Mild Rotel instead, or choose Hot Rotel for more heat.
  • For a shortcut, you can swap in 4 cups of shredded rotisserie chicken. Skip browning, season the onion and garlic instead, and stir the chicken in after the cream cheese melts so it doesn’t dry out.
  • The sauce may look a little loose when you first turn off the heat, but let it rest for a few minutes before serving. It thickens up quite a bit as it sits.
  • Leftovers keep in an airtight container in the refrigerator for up to 4 days. The pasta soaks up sauce as it sits, so add a splash of broth or milk when reheating. This dish doesn’t freeze well, since the creamy sauce can separate and the spaghetti turns soft.

How to Make One-Pot Chicken Spaghetti Step by Step

chicken spaghetti ingredients

Gather all the ingredients together.

Seasoned chicken pieces browned in a large stainless steel pot.

Season and brown the chicken: Heat 1 tbsp of olive oil in a large, heavy-bottomed pot over medium-high heat. Season 2 lbs of bite-size chicken tender pieces with 1 tsp of kosher salt, 1 tsp of garlic powder, 1 tsp of onion powder, 1 tsp of Italian seasoning, ½ tsp of smoked paprika, and ½ tsp of black pepper. Add the chicken to the pot and cook for 4-5 minutes, stirring occasionally, until it’s lightly browned on the edges and almost cooked through. Transfer the chicken to a plate and set it aside. You’ll add it back once the spaghetti is cooked, so save any juices that collect on the plate.

Diced onion and minced garlic sautéing in a stainless steel pot.

Build the classic chicken spaghetti base: Add 1 finely diced yellow onion and cook for 3-4 minutes, until softened and turning translucent. Stir in 1 tablespoon of minced garlic and cook for about 30 seconds, just until fragrant.

Rotel diced tomatoes with green chiles added to sautéed onion and garlic in a pot.

Add the Rotel: Pour in one 10-oz can of Rotel with all its juices and stir for about a minute, scraping up the browned bits from the bottom of the pot. Those bits are packed with flavor.

Chicken broth and heavy cream swirled together with Rotel in a stainless steel pot.

Add the creamy liquid: Pour in 4 cups low-sodium chicken broth and 1 cup heavy cream. Stir everything together and bring it to a gentle boil.

Uncooked spaghetti being added to a creamy tomato broth in a large pot.

Cook the spaghetti right in the sauce: Add 16 oz. spaghetti directly to the pot. As the noodles soften, after a minute or two, press them down under the liquid. Cover and cook for 10-13 minutes, stirring every couple of minutes. Keep the heat at a gentle simmer with small bubbles around the edges. The liquid will slowly turn creamier and thicker as the pasta releases its starch.

Cubes of cream cheese and butter added to cooked spaghetti in a creamy sauce.

Melt in the butter and cream cheese: Once the spaghetti is almost al dente, with just a little bite left in the center, reduce the heat to low. Add 2 tbsp butter and 8 oz. cubed cream cheese and stir until completely melted and smooth.

Browned chicken pieces added back on top of cheesy spaghetti in a stainless steel pot.

Add the chicken back: Stir the browned chicken and any juices from the plate back into the pot. Let it cook over low heat for 2-3 minutes, stirring gently, until the chicken is cooked through.

Shredded cheddar, Monterey Jack, and Parmesan cheese added to creamy spaghetti in a pot.

Stir in the cheese: Add 1½ cups of sharp cheddar, 1 cup of Monterey Jack, and ½ cup of Parmigiano-Reggiano, letting each addition melt before adding the next. The sauce should turn thick, glossy, and incredibly creamy, coating every piece of chicken.

Rest and serve: Let the pot sit off the heat for a few minutes so the sauce can thicken. Serve topped with 2 tbsp of chopped fresh parsley and 2 thinly sliced green onions, plus extra Parmesan and cracked black pepper if you like.

How to Store and Reheat Chicken Spaghetti

Store leftovers in an airtight container in the refrigerator for up to 4 days. The spaghetti keeps absorbing the sauce as it sits, so it will look thicker the next day. That’s completely normal, and a splash of liquid brings it right back.

Freezer

I don’t recommend freezing this one. Cream cheese sauces tend to separate and turn grainy after thawing, and spaghetti that has already soaked up sauce gets soft and mushy. It’s best enjoyed fresh or as leftovers from the fridge.

Reheating

  • Stovetop. This is the best way to bring back the creamy texture. Add the leftovers to a pot with a splash of chicken broth or milk and warm over medium-low heat, stirring occasionally, until heated through.
  • Microwave. Add a splash of broth or milk, cover the bowl loosely, and heat in 1-minute intervals, stirring between each one so the sauce stays smooth.

Make Ahead

This recipe is best made fresh because the spaghetti continues to absorb the sauce as it sits. You can still do almost all of the prep earlier in the day. Chop the chicken and onion and keep them covered in the refrigerator, measure out the seasonings, and shred the cheese. When it’s time for dinner, everything is ready to go straight into the pot. Pre-chopped onion and rotisserie chicken make it even easier.

What to Serve with Chicken Spaghetti

I always serve this the classic way, straight from the pot with a big sprinkle of freshly grated Parmesan, lots of cracked black pepper, and a little extra parsley or green onion on top. Since it’s a complete meal with pasta, chicken, and a creamy sauce, I like to keep the sides simple.

My kids’ favorite part of this dinner is a warm piece of homemade garlic bread for scooping up every last bit of cheesy sauce left in the bottom of the bowl. When I want something a little more special for Sunday dinner, I make a batch of Olive Garden-style breadsticks instead.

With a sauce this rich, I always want something bright and crunchy on the side. A cool, tangy cucumber salad cuts right through the creaminess, and you can make it ahead so it’s ready the minute dinner is. On nights when I want a leafy salad, this green goddess salad is my go-to because its herby dressing pairs so well with the Rotel’s little bit of heat.

For a quick weeknight, I’ll roast a pan of broccoli or green beans while the pasta cooks. They need nothing more than olive oil, salt, and pepper, and the hands-off timing means dinner still comes together all at once.

More Nostalgic Chicken Comfort Food

  • Baked Chicken Spaghetti: This casserole-style chicken spaghetti combines tender chicken, spaghetti, tomatoes, and green chilies, and melted cheese under a crispy, cheesy breadcrumb topping. It’s the perfect choice when you want the classic baked version that comes out of the oven hot, bubbly, and golden.
  • Easy Chicken Tetrazzini: Chicken tetrazzini is another creamy chicken pasta classic, made with fettuccine tossed in a rich garlic and mushroom cream sauce. A layer of Parmesan and buttery breadcrumbs bakes up golden on top, making it a cozy option for family dinners and potlucks.
