Smothered Cajun Green Beans

These Smothered Cajun Green Beans are anything but ordinary! Fresh green beans are slow cooked until tender in a flavorful broth with crispy bacon, smoky andouille sausage, onion, and Cajun seasoning. Red potatoes make them extra hearty and every bite is packed with southern Cajun flavor.

They are the perfect side dish for a Sunday dinner, holiday meal, or anytime you want to turn simple green beans into something special.

Along with Southern-Style Green Beans, Crockpot Buttery Bacon Green Beans, and Candied Green Beans, this is my favorite way to cook green beans.

What Are Smothered Green Beans?

Smothered green beans are cooked low and slow in a flavorful liquid until they become tender and soak up all the delicious seasoning. Unlike crisp-tender green beans, they are meant to be soft and incredibly flavorful. For this recipe, the broth is flavored with bacon, Andouille sausage, onion, and Cajun seasoning and it gives them a rich southern flavor.

Ingredients Needed For Smothered Cajun Green Beans

  • Bacon
  • Andouille Sausage– there are lots of different brands of andouille sausage and they vary greatly in taste and spice level. It’s best to try a few different brands and see which one appeals to you the most. Note: If you have leftover Andouille, it can be frozen or you can dice it, brown it and use it as an omelet filling.
  • Onion
  • Butter
  • All-purpose flour– helps thicken the liquid just a touch so it coats the green beans better.
  • Chicken broth– adds so much flavor.
  • 1 1/2 pounds fresh green beans– cut into pieces so they are easier to eat.
  • Cajun seasoning– I use Tony Chachere’s.
  • Black Pepper
  • Garlic Powder
  • Red Potatoes

How To Make

  1. Cook the bacon until crisp and reserve it.

  2. Cook the Andouille sausage until browned and reserve it.

  3. Add the onion and cook until soft.

  4. Make a roux with butter and flour and then gradually whisk in chicken broth.

  5. Add the seasonings and simmer the green beans.

  6. Add the potatoes and cook until tender. Add the sausage back in after 15 minutes.

  7. Sprinkle with bacon and serve.

Slow Cook The Green Beans

What makes these green beans so flavorful is how long they cook. They get really soft and soak up so much flavor from the onion, bacon grease, sausage, chicken broth, and cajun seasoning.

Seasoning

If you want to add a little more heat, you can add a little TABASCO sauce or a pinch of crushed red pepper flakes.

The chicken broth and Cajun seasoning will most likely add enough salt, but check for seasoning at the end and add salt if needed.

Make-Ahead and Storage

These green beans are actually a great make-ahead side dish. Cook them completely, let them cool, and refrigerate. Reheat gently on the stovetop or in the microwave. Add a little fresh crispy bacon before serving if desired.

Leftovers will keep for 4 days in an airtight container in the refrigerator. Reheat in a microwave or a covered pot over medium-low heat.

Smothered Cajun Green Beans are a great side dish to serve with any southern meal. Fresh green beans are slow cooked in chicken broth with red potatoes and flavored with bacon, onion, cajun seasoning, and Andouille sausage.

Ingredients

  • 4 slices bacon cut into 1/2-inch pieces
  • 8 ounces Andouille sausage sliced
  • 1 medium onion diced
  • 1 tablespoon butter
  • 1 1/2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup water
  • 1 1/2 pounds fresh green beans trimmed and cut into 2-inch pieces
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 4 red potatoes cut into 6 to 8 pieces each

Instructions

  • Cook bacon in a Dutch oven or large pot until crisp. Remove with a slotted spoon to a paper towel-lined plate and set aside.
  • Add sausage to the pot and cook in the bacon grease until browned. Remove with a slotted spoon and set aside.
  • Add onion to the pot and cook until softened, 4 to 5 minutes.
  • Add butter and when it melts, sprinkle flour over the onions. Cook and stir for 1 minute.
  • Gradually whisk in chicken broth, scraping up the browned bits off the bottom of the pot.
  • Add water, green beans, Cajun seasoning, black pepper, and garlic powder. Bring to a boil. Reduce heat to maintain a simmer. Cover and cook for 25 minutes.
  • Add potatoes. Stir them in so they are submerged as much as possible. If you need to, add a little more water.
    Cover and cook for 15 minutes.
  • Uncover the Dutch oven and add sausage. Cook uncovered for 15 minutes.
  • Stir in bacon and serve.

Notes

Taste before adding any salt. The broth, bacon, Cajun seasoning, and sausage are all salty.
Creole seasoning can be substituted for Cajun seasoning.
