Taco Bell’s Nacho Fries just got closer to home. These are crispy, seasoned fries paired with a perfectly warm, creamy nacho cheese for dipping. These are the type of fries you have a hard time stopping eating. The fries are tossed in a simple homemade seasoning blend with smoky paprika, cumin, garlic, a little heat, and just enough sweetness to give them that fast-food flavor. The cheese is made with deli-style American cheese, evaporated milk, and pickled jalapeños, so it melts into a smooth, glossy sauce with a little tang. Best of all, you start with a bag of frozen fries and put all of the effort into the seasoning and nacho cheese that really elevate the fries. They are perfect for taco night, burger night, movie nights, and game days.

Better Than the Drive-Thru
I’m guilty of Taco Bell being one of my favorite fast food joints. The Nacho Fries on the menu are good, but I was determined to make them GREAT. I wanted a version at home that quenched that fast food craving, but with elevated flavor and texture. All while using a handy bag of frozen fries. These come together in about 25 minutes and make 4 servings, so they are easy to pull off for a group whenever the craving hits.
The biggest thing I wanted to get right was the seasoning. Taco Bell’s Nacho Fries don’t taste like they’re covered in traditional taco seasoning. There’s a very specific combination of smoky, savory, salty, slightly sweet, and spicy flavors that makes them taste like the real thing. That is why this blend uses paprika, cumin, garlic, and onion for depth, chili powder and black pepper for a little heat, and a pinch of sugar for that subtle sweetness you notice in the original. It’s not simply spicy. It has layers.
American cheese is the key to getting that smooth, creamy nacho sauce texture. Evaporated milk keeps it silky and stable, while pickled jalapeños and a little jalapeño brine add the tangy heat that makes the cheese taste more like a true nacho sauce instead of plain melted cheese.
The goal was never to make a complicated copycat recipe. It’s about getting the flavor right while keeping the whole thing easy enough that you can make it any night of the week. The fries should come out deeply golden and crisp with a generous coating of smoky, savory seasoning, and the cheese should be smooth and creamy with a little tang and just enough jalapeño heat. Together, they hit that salty, spicy, cheesy combination that makes the original so good.
Do I Have to Deep Fry the Fries?
Not at all. I fry the frozen fries in oil at 350°F because that gives me the crunchiest, most fast-food-style result, but this recipe is designed around a shortcut, so you can absolutely skip the pot of oil.
Choose your favorite frozen fries and cook them in the oven or air fryer according to the package directions. An air fryer is especially great for getting them extra crispy. Whichever method you use, cook them until they are deeply golden, not just pale and heated through. A crispier fry holds onto the seasoning better and stands up to the cheese, while a soft fry gets soggy the second it meets the sauce.
I use Ore-Ida Crispy Fast Food Fries because the thin, crispy cut is the closest match to the real thing, but any thin-cut frozen fry works well here.
Tips for the Best Nacho Fries
- Season the fries the second they come out. The seasoning sticks much better immediately after the fries come out of the oil, oven, or air fryer. While the fries are still screaming hot, toss them in a large bowl with the seasoning. Once they cool, the seasoning just falls off and ends up at the bottom of the bowl instead of on the fries.
- Don’t be shy with the seasoning. The fries should have a generous coating so you get that flavor in every bite. If your fries look lightly dusted, keep sprinkling and tossing until every fry is coated.
- Keep the cheese over low heat the whole time. Don’t let the cheese sauce boil. That’s how you get a smooth, glossy nacho sauce instead of a broken cheese sauce. High heat causes the sauce to separate and lose that smooth texture, so keep the burner low and stir constantly while it melts.

- Heat the neutral oil to 350°F in a large, heavy pot. Fry the frozen fries in batches until deeply golden and crispy.2 lbs frozen French fries, neutral oil
- Immediately drain the fries and season with 1½ teaspoons kosher salt.1½ tsp kosher salt
- Put the American cheese and evaporated milk in a small saucepan over low heat. Stir constantly until completely smooth. Add the minced jalapeños, jalapeño brine, and garlic powder, and stir until incorporated. Keep warm over very low heat, but don’t let it boil.8 oz. - While the fries are still hot, put them in a large bowl. Sprinkle generously with the seasoning mixture and toss until every fry is coated.
- Pile the fries onto a plate or basket and serve immediately with the warm nacho cheese for dipping.
Notes
- A crispier fry holds onto the seasoning and stands up to the cheese, so cook the fries until they are deeply golden.
- The seasoning only sticks while the fries are hot, so toss them in the seasoning right after cooking.
- Boiling makes cheese sauce separate and turn grainy, so keep the nacho cheese over low heat and stir constantly.
- To skip deep frying, cook the frozen fries in the oven or air fryer according to the package directions, then season them as soon as they come out.
- For milder cheese, reduce the minced jalapeños to 1 tablespoon but keep the brine for that tangy flavor.
- The seasoning can be mixed several days ahead, so store it in a small airtight container until you need it.
- Leftover fries and cheese keep in the refrigerator for up to 3 days, so store them in separate airtight containers. Reheat the fries in an air fryer or oven until crispy, and warm the cheese gently over low heat with a splash of evaporated milk.

How to Make Nacho Fries Step by Step

Gather all the ingredients together. Before you get started, gather everything you’ll need for both the seasoned fries and homemade nacho cheese sauce. Having everything ready makes the recipe quick and easy to put together.

Make the seasoning: In a small bowl, mix together ½ tsp paprika, ¼ tsp chili powder, ½ tsp garlic powder, ½ tsp onion powder, ¼ tsp ground cumin, ½ tsp sugar, ½ tsp kosher salt, and ¼ tsp black pepper. Stir until the color is even, with no streaks of paprika. Set it aside so it’s ready the moment the fries come out.

Fry the fries and season them: Heat neutral oil to 350°F in a large, heavy pot. Fry 2 lbs of frozen French fries in batches until deeply golden and crispy. The fries are ready when they are a rich golden color and sound crisp when you tap them with tongs. Frying in batches keeps the oil hot, so the fries crisp up instead of turning greasy. Immediately drain the fries and season them with 1½ tsp kosher salt while they are still glistening from the oil.

Season the fries: While the fries are still screaming hot, put them in a large bowl. Sprinkle generously with the seasoning mixture and toss until every fry is coated in a reddish-orange layer of seasoning.

Make the nacho cheese: Put 8 oz. American cheese and ½ cup evaporated milk in a small saucepan over low heat. Stir constantly until completely smooth.

Add the jalapeños and garlic powder: Add 2 tbsp very finely minced pickled jalapeños, 1 tbsp jalapeño brine, and ¼ tsp garlic powder. Stir until incorporated. The sauce should be smooth, glossy, and pourable, and it should coat the back of a spoon. Keep it warm over very low heat. Don’t boil it.

Serve: Pile the fries onto a plate or basket and serve immediately with a generous cup of the warm nacho cheese for dipping.

Storage and Reheating Instructions
The fries are best served immediately, while the fries are hot and crispy and the cheese is warm and dippable. I recommend only making as much as you’ll eat, but if you do have leftovers, here’s how to handle them.
Refrigerator
Store leftover fries and cheese separately in airtight containers in the refrigerator for up to 3 days. Keeping them separate prevents the fries from absorbing the sauce and turning soft.
Freezer
I don’t recommend freezing the cooked fries, because they lose their crispy texture once they thaw. The extra fry seasoning keeps well in your pantry instead.
Reheating
Reheat the fries in an air fryer or oven until hot and crispy again. Skip the microwave for the fries, since it steams them and makes them limp. Reheat the nacho cheese gently over low heat, stirring often. Add a small splash of evaporated milk if needed to loosen it, since it thickens as it chills.
What to Serve with Nacho Fries
These are perfect for a fun dinner at home, especially when we’re doing taco or burger night, or anything that feels a little more casual. They’re best served right away, so I always time the fries to come out last, once everything else is on the table.
Taco Night
The classic move is a full Taco Bell-inspired spread. I serve these fries with baked chicken tacos because they bake on a sheet pan at the same time I’m making the cheese, so dinner comes together all at once. I like to add a bowl of cilantro lime rice too, since its fresh lime flavor balances out the rich cheese.
Burger night. When we want something more casual, I pair these with stovetop burgers. The smoky fry seasoning is a fun upgrade from plain fries, and I love dipping a bite of burger into the leftover nacho cheese.
Game Day and Movie Night
When I’m serving these for a crowd, I put the fries on a big platter with the cheese in a bowl right in the middle so everyone can grab a handful. For a game day spread, I add a batch of crispy baked chicken wings, since they bake hands-off in the oven while I focus on frying the fries. For the adults, a margarita pitcher keeps the Mexican-inspired theme going.
