This definitely isn’t diet fare with cream cheese, Velveeta, heavy cream, and butter. It’s an indulgent dish, but a little goes a long way.

Slow Cooker Jalapeno Creamed Corn

Ingredients

  • Corn– I like to use frozen corn for this Crock Pot Jalapeno Creamed Corn. You could use fresh corn when in season or you can use canned corn.
  • Cream Cheese– cut it into cubes so it melts faster.
  • Velveeta cheese– cut into cubes so it melts faster.
  • Butter
  • Heavy Cream
  • Pickled Jalapenos– use more or less than the recipe calls for depending on how spicy you want it to be.
  • Salt, pepper, garlic powder– for seasoning.

A smaller 4-quart crock pot works well for this recipe, but you could use a larger one.

Quick and Easy Prep

All of the ingredients get mixed together in the crock pot so it only takes 5 to 10 minutes to prep. You will need to cook it on LOW for about 4 hours, stirring halfway through.

How To Make Crock Pot Jalapeno Creamed Corn

  1. Add the ingredients to the slow cooker. Place the corn, cream cheese, Velveeta cheese, butter, pickled jalapenos, salt, pepper and garlic powder in the slow cooker.

  2. Stir together. Mix it all together as best you can. It doesn’t have to be completely mixed.

  3. Cook. Cover and cook on LOW for 4 hours.

  4. Stir halfway through. Open the slow cooker halfway through and stir so everything heats evenly and it doesn’t burn around the edges.

How Spicy Is Jalapeno Creamed Corn?

This recipe has a mild to medium kick, but the heat level is easy to adjust.

For mild creamed corn, reduce the amount of jalapenos to 1/4 cup.

For more heat, add a little cayenne pepper or crushed red pepper flakes in addition to jalapenos.

The Perfect Holiday Side Dish

This spicy southern corn recipe is especially handy for the holidays (Thanksgiving, Easter, and Christmas) because it doesn’t require oven space. Leave the oven for the turkey or ham and casseroles and let your slow cooker handle the corn.

It can also be made ahead and kept warm in the slow cooker until dinner is ready, making it great for a buffet-style meal.

Ingredients

  • 2 (19-ounce) bags frozen corn, thawed
  • 1 (8-ounce) package cream cheese cut into cubes
  • 12 ounces packaged processed cheese (Velveeta) cut into cubes
  • 1/4 cup butter cut into cubes
  • 3/4 cup heavy cream
  • 1/3 cup finely diced pickled jalapenos
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions

  • Lightly grease a 4-quart crock pot. Add all ingredients to the slow cooker.
  • Stir everything together.
  • Cover and cook on LOW for 4 hours, stirring half way through.
  • Serve.

Notes

Use more or less jalapenos depending on how spicy you want it. A pinch of cayenne pepper can be used for extra heat.
Fresh corn or canned corn can be used instead of frozen corn.
Storage- Leftovers can be kept in an airtight container in the refrigerator for 4 days.
