Cubes of beef cook up nice and tender on the stovetop, along with a rich brown sauce that packs in tons of flavor. Served over mashed potatoes, this one-pot beef tips recipe is the perfect family dinner!

Sometimes I just want some hearty comfort food for dinner, and this easy recipe for beef tips with a savory brown gravy is the answer to my cravings. The meat gets so tender, it practically melts in your mouth! Plus stew meat is so affordable, and the rest of the ingredients are pantry staples, so this is a good budget-friendly meal too.

Beef Tips and Gravy Recipe

Tender cubes of beef are cooked on the stovetop in a rich brown sauce to create this easy comfort food dish!

Ingredients

  • 1½-2 pounds beef stew meat cut into cubes
  • 2 tablespoons flour
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • ¼ cup olive oil divided
  • ½ onion chopped
  • 2 garlic cloves minced
  • ½ cup red wine
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons cornstarch + 2 tablespoons water

Instructions

  • Toss the beef with the flour, salt, garlic powder, onion powder, and pepper until evenly coated.

  • Heat 2 tablespoons of olive oil in a large skillet over medium high heat.

  • Once heated, add in the beef cubes in an even layer. You may need to do this in 2 batches to avoid crowding the pan. Brown the beef on all sides. Set aside on a plate.

  • Add in another 2 tablespoons of oil, the onion, and a sprinkle of salt. Cook for a few minutes until softened. Add in the garlic and cook for another minute.

  • Pour in the wine and let it sizzle while scraping up any brown bits from the bottom of the pan.

  • Add in the beef broth and Worcestershire sauce and stir. Bring the mixture to a boil. Then, reduce to a simmer.

  • Combine the cornstarch and water in a small dish and whisk. Then stir it into the sauce to thicken.

  • Add the beef back to the pan. Cover the pan and continue to simmer for 40 minutes until the beef is tender.

  • Uncover the pan, and cook for another 3-4 minutes until the sauce has thickened.
  • Serve with mashed potatoes or noodles.

Notes

  • The secret to making beef tips tender is time! The slower you cook the cubes of meat, the more the fibers will break down and become less chewy. Feel free to let the stew meat simmer longer in the gravy. However, I find that 40 minutes is enough time to cook beef tips on the stovetop to make them deliciously tender.

Season the Beef: Toss 1½-2 pounds of beef stew meat with 2 tablespoons of all-purpose flour, 1 teaspoon of salt, ½ teaspoon of garlic powder, ½ teaspoon of onion powder, and ¼ teaspoon of black pepper, until evenly coated.

How to Store and Reheat

Store beef tips in an airtight container in the refrigerator for up to 3 days, or freeze for 3 months. Reheat on the stovetop over medium heat, stirring occasionally, until warmed through. Thaw first if frozen.

My favorite way to serve beef tips and gravy is over a nice big mound of mashed potatoes! These creamy mashed potatoes are my go-to, but these Instant Pot mashed potatoes are extra quick and easy. Some other serving options are egg noodles, white rice, or mashed cauliflower.
