For the Parker House Rolls

- 2 teaspoons active dry yeast 6 grams
- 4 tablespoons unsalted butter 57 grams, divided (½ stick)
- 1 large egg 100 grams
- 2½ cups all-purpose flour 300 grams
- 1 teaspoon kosher salt 3 grams
For the Ham
- 4 pound boneless spiral ham
- ¼ cup brown sugar
- 1 teaspoon minced fresh thyme
- 1 teaspoon minced fresh garlic
For the Prosciutto Wrapped Asparagus
- 3 ounces thinly-sliced prosciutto (about 8 pieces)
- ½ pound asparagus woody ends trimmed
- 1 teaspoon olive oil
Instructions
For the Parker House Rolls

Add the milk to a medium bowl and sprinkle over the yeast. Set aside for 5 minutes, or until the yeast has bloomed.¾ cup milk, 2 teaspoons active dry yeast

Add 2 tablespoons of melted butter along with the egg. Whisk to combine.4 tablespoons unsalted butter, 1 large egg

Add the flour and salt and stir them into the wet ingredients with a dough whisk or wooden spoon.2½ cups all-purpose flour, 1 teaspoon kosher salt

When a shaggy dough forms, transfer the dough to a clean surface and knead until the dough is smooth, about 2 minutes.

Set the dough aside to rise in a warm place until doubled in size, about 1 hour.

Punch the dough down and roll it into a ½-inch thick rectangle. Cut the dough into rectangles that are approximately 1 inch wide and 3 inches long.

Brush the rolls with the remaining melted butter and roll them into circles. Repeat with the remaining pieces of dough.

Leave the rolls in a warm place to rise again while you par-bake the ham.
For the Ham

Preheat oven to 375°F.

Create a small foil bowl, just large enough to hold the ham. Place the bowl on the sheet pan and then place the ham in the bowl.

Trim the woody ends from the asparagus and wrap each piece with one piece of prosciutto. Set aside until ready to use.½ pound asparagus

Once the ham has par-baked, create a foil bowl that is large enough to hold all of the rolls– it should be about ¼ the size of your baking sheet.
