Leftover Thanksgiving Turkey Recipe

My favorite thing about Thanksgiving is the leftovers. Leftover turkey can be repurposed in so many ways. I love it in Turkey Tetrazzini, Turkey Corn Chowder, Turkey Florentine, and Turkey Broccoli Alfredo.

How To Make Slow Cooker Cajun Turkey Soup

  1. Cook the sausage, onion, celery, and bell pepper in a skillet until the sausage is browned and the veggies are soft.
  2. Place in a slow cooker along with turkey, Cajun seasoning, diced tomatoes, garlic powder, chicken broth, and corn.
  3. Cover and cook on LOW for 4 to 6 hours. So easy!

How To Serve

I love this soup with Buttermilk Cornbread Muffins or Potato Rolls.

Variations

  • Use chicken instead of turkey.
  • Add a can of beans.
  • Creole seasoning can be used in place of Cajun seasoning. I like Tony Chachere’s.
  • Add a can of green beans.
  • Use leftover ham instead of turkey.
  • Use kielbasa smoked sausage in place of Andouille.

Cajun Flavors

This soup is really spiced up with some Cajun flavors. There’s the Holy Trinity- onions, celery, and bell pepper, lots of Cajun seasoning, and some Andouile sausage.

Level Of Spice

You can easily make this recipe more or less spicy. To make it less spicy, use kielbasa sausage in place of Andouille sausage and cut the Cajun seaosning in half. To make it more spicy, serve with Hot Sauce, either Zatarain’s or TABASCO.

How To Store

Leftovers will keep in an airtight container in the refrigerator for 4 days or you can freeze it for up to 2 months.

Ingredients

  • 1 tablespoon olive oil
  • 12 ounces Andouille sausage, sliced
  • ½ medium onion, diced
  • 1 celery rib, diced
  • ½ green bell pepper, diced
  • 2 cups diced cooked turkey
  • 1 tablespoon Cajun seasoning
  • 1 (14-5-ounce) can diced tomatoes, undrained
  • 1 teaspoon garlic powder
  • 3 cups chicken broth
  • cups frozen corn
  • 1 tablespoon chopped fresh parsley

Instructions

  • Heat oil in a large nonstick skillet over medium-high heat.
    Add sausage, onion, celery and bell pepper and cook until sausage is browned.
    Transfer to a 6-quart slow cooker.
  • Add turkey, Cajun seasoning, diced tomatoes, garlic powder, chicken broth, and corn.
  • Cover and cook on LOW 4 to 6 hours.
  • Add parsley and season to taste with salt and pepper.
