Margarita Popsicles

There’s nothing more refreshing on a hot summer day than a fruity margarita–except maybe Layered Margarita Popsicles! These even-more-refreshing alcoholic popsicles are the perfect way to enjoy the summer sun. My homemade ice pops combine three flavors: strawberry, peach, and lime. They’re perfect for Cinco de Mayo!

Layered Margarita Popsicles

Layered Margarita Popsicles are the perfect cocktail alternative for the summer, especially Cinco de Mayo. These refreshing homemade ice pops are easy, colorful, and full of flavor!

There are three layers here, each a different flavor and color: strawberry margarita, white peach margarita, and lime margarita. Each section is made with simple ingredients to make the entire process easy, fun, and refreshing.

We use tequila as our alcohol of choice, and they’re sweetened with agave nectar.

Ingredients

  • Fruit: Strawberries and white peach are blended in a food processor so the pieces are small.
  • Fruit Juice: Lime (freshly squeezed), and strawberry (I used Naked Berry Blast) are vibrant and full of flavor.
  • Soda: Use a lemon/lime soda, such as Lime Diet Sierra Mist.
  • Limeade: I used a frozen concentrate.
  • Tequila: Choose a good tequila for a smooth flavor. I love Camarena Tequila.
  • Agave Nectar: This is a natural, liquid sweetener that is widely available at grocery stores.

How to Make Margarita Popsicles

  1. In three separate cups, mix each of the layers.
  2. Fill ice pop molds 1/3 full with strawberry layer and freeze for at least 2 hours.
  3. Repeat with the other two layers, allowing 2 hours between each addition.
  4. Enjoy!

How long do these keep in the freezer?

Once these are made, margarita popsicles will keep as long as they are kept consistently frozen. But they are best quality if eaten within 3 months.

How long does it take to freeze homemade popsicles?

It takes about 2 hours to fully freeze each layer. So for 3 layers, it’ll take around 6 hours to finish freezing. Be sure to make them the day before if you’re preparing for a party or gathering!

Can I make different flavors?

Absolutely! Add different fresh/frozen fruits, juices, and concentrates to make any flavor you like. Try mango, raspberry, or lemon!

How do I serve these margarita popsicles?

If the mold doesn’t have a built-in stick handle, freeze the pops for about an hour before inserting your own popsicle sticks. This will help them stand up straight.

Another trick is to place foil over the mold and poke the sticks through. The foil supports the sticks and keeps them upright.

As an alternative to molds, use disposable paper cups, adding sticks as mentioned above. Once frozen, tear away the cup and enjoy the pop.

Tips!

  • If you’d like to make single-flavor popsicles instead, each flavor should make 2 pops (depending on the size/shape of your popsicle molds). These will be quicker to make, because you don’t need to freeze each layer separately, and you can make them all at once. 
  • Submerge the popsicle mold halfway in lukewarm water for about 30 seconds to help release the frozen pops.
  • Don’t use more than 1 teaspoon of tequila per popsicle layer, or it won’t freeze.
  • A food processor or high-powered blender helps create very small pieces of fruit that will freeze nicely in these margarita popsicles.

Can I make these popsicles without alcohol?

Absolutely! These are so fun, and you could easily leave out the tequila to make them non-alcoholic and kid friendly. Each section is super fruity. I’m ready for the hot weather! C’mon summer!

Why is my alcoholic popsicle slushy?

Alcoholic popsicles have a softer texture than the nonalcoholic kind, due to the alcohol’s freezing point. Make sure to add only the amount of tequila stated in the recipe, not more. The more you add, the slushier they will become! While margarita slushes might be a great idea, that’s not what we’re after in this recipe. Because of this, it’s best to keep them in the freezer until the very last minute.

Layered Margarita Popsicles (Alcoholic)

Ingredients

For the Strawberry Section:

  • 4 strawberries blended in a food processor to create very small pieces
  • 1 cup strawberry juice blend Recommended: Naked brand Berry Blast
  • 1 tablespoon tequila recommended: Camarena Tequila
  • 1 tablespoon agave nectar
  • 1/2 tablespoon fresh lime juice

For the White Peach Section:

  • 1 white peach blended in a food processor to create very small pieces
  • 1 cup lemon-lime soda such as Diet Sierra Mist
  • 1 tablespoon tequila Recommended: Camarena Tequila
  • 1 tablespoon agave nectar
  • 1/2 tablespoon fresh lime juice

For the Lime Section:

  • 3 tablespoons limeade concentrate frozen
  • 1 cup water
  • 1/2 tablespoon agave nectar
  • 1 tablespoon tequila Recommended: Camarena Tequila

Instructions

  • Combine the ingredients for each section in 3 separate cups or containers.
  • Spoon 1/6 of strawberries into each popsicle mold. Pour 1/6 of strawberry margarita mixture into each popsicle mold, pouring to about 1/3 of the way up the popsicle mold. Allow this section to freeze for at least 2 hours before proceeding to next section.
  • After the strawberry section has been in the freezer for at least 2 hours, spoon 1/6 of the fresh peaches into each mold. Pour 1/6 of the peach margarita mixture into each mold, this time the molds will be filled about 2/3 of the way up. Allow this section to freeze for at least 2 hours before proceeding to the final section.
  • After the peach section has been in the freezer for at least 2 hours, top with lime margarita mixture. If desired, cut small lime pieces to place at the top of each popsicle. Freeze for at least 2 hours or until completely frozen through. Enjoy!

Notes

  • An ice pop mold is the easiest and least expensive way to make popsicles. Molds typically make between six and eight three-ounce ice pops. Some include the sticks, which is very convenient.
  • Give yourself extra time if you want to create layered ice pops. For a well-defined line between flavors, each layer needs to set completely before adding the next layer. If you want softer lines, add the second layer when the first is only partially frozen. Keep the ingredients chilled in between layers for a faster freeze.
  • Submerge the mold halfway in lukewarm water for about 30 seconds to release the frozen pops.
  • Stick to one teaspoon of tequila per popsicle layer. If you use more than a teaspoon of booze per pop, they simply won’t freeze. The stick will slide right out and you’ll have to dig all that good stuff out with a spoon.
