This one is for all of my Christmas bakers – and i know there are a lot of you! These delicious cowboy cookies are the perfect treat to enjoy this festive season.

These oatmeal cookies are loaded with texture and flavor. Sweet white chocolate chips and coconut flakes with crunchy pistachios and tangy cranberries are folded into the chewy oatmeal dough and baked to perfection.

This is one cookie recipe that you will make time and time again!

How to Make Christmas Cowboy Cookies

  1. Brown the butter.
  2. Whisk together the dry ingredients.
  3. Beat together the sugar and browned butter and mix in the egg and vanilla.
  4. Combine the wet and dry ingredients.
  5. Fold in the oats, coconut, cranberries, pistachios, and white chocolate chips.
  6. Scoop the dough onto a lined baking sheet.
  7. Bake until slightly browned.
  8. Drizzle with melted white chocolate to serve.

What are cowboy cookies?

Cowboy cookies are bakery style cookies with added oats, chocolate chips, dried fruit, coconut flakes and nuts. Simple to make and delicious to eat, they are full of texture and flavor.

What is browned butter?

Browned butter is melted butter, that is cooked for a little longer to enhance the flavors. Check out my how to make browned butter post for detailed instructions.

What other add-ins can I use?

Stick to about 3 cups of total add-ins. Chopped nuts, M&Ms, dried fruits and other types of chocolate chips all work great.

How big are these cowboy cookies?

These are large bakery style cookies. Be sure to leave room on the baking sheet as they will spread out!

Tips!

  • Storage: Store cookies in an airtight container at room temperature for up to 5 days.
  • Freezing Instructions: Freeze the cookies without the white chocolate drizzle for up to 3 months. When ready to serve, let the cookies thaw before adding the drizzle.
  • Don’t over mix the cookie dough when you add the dry ingredients. Stop mixing once there is no dry flour, over mixing can lead to dense and tough cookies.

Can I use regular melted butter instead of browned butter?

Although you can use regular melted butter, browned butter is so good in these! It has a rich and nutty flavor and is totally worth the extra couple of minutes!

Can I use quick oats instead of old-fashioned oats?

Old fashioned oats are best to use in this recipe as they have a nice chewy texture. You can use quick oats but they will be softer. Avoid steel cut oats which will be too tough to eat.

Each cookie is made with 1/4 cup of batter, or 4 tablespoons.

Christmas Cowboy Cookies Recipe

Ingredients

  • 12 tablespoons unsalted butter browned & cooled
  • cups all-purpose flour
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon table salt
  • ½ teaspoon coarse sea salt
  • 1 cup dark brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon pure vanilla extract
  • cups old-fashioned rolled oats
  • ¾ cup sweetened shredded coconut
  • ¾ cup dried cranberries rough chopped
  • ¾ cup shelled roasted pistachios, rough chopped
  • cup white chocolate chips divided

Instructions

  • Place the butter into a light-colored saucepan. Heat the butter until it browns. Once brown, let it cool to room temperature.
    12 tablespoons unsalted butter
  • Preheat oven to 350°F. Line 2 baking sheets with parchment paper and set aside.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
    1¼ cups all-purpose flour, ¾ teaspoon baking powder, ½ teaspoon baking soda, ½ teaspoon table salt, ½ teaspoon coarse sea salt
  • In the bowl of a stand mixer fitted with a paddle attachment, beat the brown sugar and cooled browned butter together until well combined. Add the egg, egg yolk, and vanilla. Mix well.
    1 cup dark brown sugar, 1 large egg, 1 large egg yolk, 1 teaspoon pure vanilla extract
  • Add the dry ingredients to the wet ingredients and mix just until no flour is visible.
  • Fold in the oats, coconut, cranberries, pistachios, and ¾ cup white chocolate chips. The mixture will be sticky.
    1¼ cups old-fashioned rolled oats, ¾ cup sweetened shredded coconut, ¾ cup dried cranberries, ¾ cup shelled, 1½ cup white chocolate chips
  • Lightly spray a ¼-cup dry measuring cup with nonstick cooking spray.
  • Use the measuring cup to scoop the dough. Drop the ¼-cup portions onto the prepared baking sheet, about 2½ inches apart. Space the dough to get 6-8 cookies per sheet.
  • Bake one sheet of cookies at a time for 14-17 minutes, until edges are set and slightly browned. The centers should be a little puffy and won’t have as much color as the edges. Do not overbake.
  • Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire cooling rack to completely cool.
  • Make the white chocolate drizzle: If desired, place the remaining ¾ cup of white chocolate chips into a microwave safe bowl. Melt the chocolate chips. Use a spoon to drizzle the melted chocolate over each cookie. Let the chocolate set before serving or storing.
