How to make Honey Mustard Pork Chops and Potatoes Skillet

- Par-boil the potatoes.
- Brown the potatoes in the skillet and set aside.
- Season the pork chops.
- Cook the chops in the skillet on both sides and let rest.
- Whisk together the ingredients for the honey mustard sauce.
- Add the sauce to the skillet and cook until it thickens.
- Return the potatoes and pork to the skillet, toss in the sauce and serve.
How long do pork chops take to cook?
Pork chops really don’t take that long to cook through, about 4 to 5 minutes a side should do it. Take care not to overcook the pork as it can become quite tough and flavorless.
Use an instant read thermometer to check that the pork is cooked through, it should register at 145F.

What’s the best cut of pork to use?
Any type of pork chops will work well in this recipe. A sirloin or top loin chop will be lower in fat and calories, but you can also use bone in rib chops that are flavorful and juicy.
I like to use boneless chops in this recipe for ease of cooking.

Honey Mustard Pork Chops and Potatoes Skillet
Ingredients
- 4 boneless pork chops
- 1 lb baby yellow potatoes
- 4 tablespoons olive oil
- ½ cup chicken broth
- ⅓ cup honey
- ⅓ cup course dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon dried oregano
- ½ teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon fresh chopped parsley for garnish
Instructions

Par-boil the baby potatoes in salted water until tender when pierced with a fork.

Heat 1 tablespoon of the olive oil in a large skillet and cook the baby potatoes until the skin in golden brown. Set aside.

Pat the pork chops dry with a paper towel and season with salt and pepper.

Using the same skillet, add another tablespoon olive oil and pork chops. Cook for 4-5 minutes per side, until cooked through. Set aside on a plate and cover with aluminum foil to rest.

In a small bowl, whisk together remaining olive oil, dijon, honey, broth and seasonings until well blended. Add to the skillet and cook on medium high heat until sauce thickens. Return potatoes and pork chops to the skillet and toss in the sauce. Garnish with fresh chopped parsley and serve immediately.
