How to make Cranberry Margaritas with Honey Lemon Ginger Simple Syrup

- Make the simple syrup by heating together the honey, water, lemon peel and ginger.
- Discard the lemon and ginger and allow it to cool.
- Stir together the simple syrup, cranberry and lemon juices in a pitcher.
- Stir in the tequila and cointreau.
- Add lemon slices and fill with ice.
- Rim glasses with lemon and salt, pour the drink and garnish with lemon wedges and mint.
How long does the simple syrup keep?
Once the simple syrup has cooled, transfer it to a sealable jar or bottle and it will keep refrigerated for up to 1 week. If I’m not going to be using it immediately or the same day, I like to store it with the lemon peel and ginger to give it more time for the flavors to infuse.
This simple syrup it’s incredibly delicious with pretty much any cocktail. It’s slightly zesty and spicy and the honey gives it a delicate floral undertone that elevates any drink.
Can you make the margaritas ahead of time?
These cranberry margaritas are a great make ahead pitcher cocktail. Make the whole drink in the pitcher, but omit the ice.
Cover the pitcher with plastic wrap and it will keep well in the fridge for up to two days.
How to garnish
No margarita is complete without a salt rim, it works so well with the tangy flavors from the cranberry and lemon juice. Rub a lemon wedge around the top of each glass, and then dip into salt.
I also like to finish it with a sprig of mint for some color and freshness.
Tips!
- Don’t add ice to your pitcher until you are ready to serve the cocktail. Adding ice too early will dilute the drink. Alternatively, you can pour the cocktail over ice.
- Let the simple syrup cool completely before adding it to the other ingredients.
- I like to make these cranberry margaritas with Cointreau for a stronger orange flavor, but you can use triple sec if that’s what you have.

Cranberry Margaritas Recipe
Ingredients
For the Cranberry Margaritas
- ⅓ Cup honey ginger simple syrup (see recipe below)
- 4 ½ Cups cranberry juice
- 1 Cup lemon juice
- 1 ½ Cups tequila
- ½ Cup cointreau
- Ice
- 1 Lemon sliced
For Garnish:
- Salt
- Lemon wedges
- Mint sprigs
For the Honey Lemon Ginger Simple Syrup:
- ½ Cup honey
- 2 lemon peels around 2 inches each
- 1 Piece ginger around 1 inch
- 1 Cup water
Instructions
For the Cranberry Margaritas:

In a pitcher stir together the simple syrup, cranberry juice and lemon juice. Add the tequila and cointreau and stir to incorporate. Add the lemon slices and fill with ice.

To assembly each margarita. Rub the glass rim with lemon and dip into salt. Once the glasses are rimmed fill with the margarita and decorate with lemon wedges and mint sprigs.
For the Simple Syrup:

In a small saucepan over low heat, stir together the honey, water, lemon peels and ginger.

Cook, stirring occasionally for 10 minutes. Remove from heat.

Discard the lemon peel and the ginger and let it cool down completely before using it.
Notes
- For the Cranberry Margaritas:
This cocktail is zesty, salty and with just a little bit of heat. It’s delicious when served cold.
You can make it ahead of time. Just omit the ice and store, covered with plastic wrap, in the refrigerator for up to 2 days. - For the Simple Syrup:
You can keep it refrigerated for up to 1 week.
