How to make Stuffed Chicken Parmesan

  1. Cut a pocket in each chicken breast.
  2. Stuff with cheese and basil leaves and close.
  3. Dredge the breasts in to flour, then egg, then seasoned breadcrumbs.
  4. Cook the chicken in the air fryer basket.
  5. Once cooked, and sauce and cheese and melt.
  6. Serve!

Can you make it ahead of time?

This chicken parm can be stuffed and dredged in the breadcrumbs earlier in the day, so all you need to do is pop it into the air fryer and you are done. If you have leftovers they will keep in the fridge for up to 4 days.

Reheat any leftovers in your air fryer at 370F for around 4 to 5 minutes to heat through. Reheating it in the air fryer will get it nice and crispy again.

Can you make this with chicken thighs?

This recipe is easiest to make with chicken breasts, but you place the filling onto thighs and roll them before stuffing.

Be aware that thighs will take slightly longer to cook through, so use an instant read thermometer to check that the internal temperature is 165F.

Stuffed Air Fryer Chicken Parmesan Recipe

Ingredients

  • 2 large chicken breasts
  • 4 slices mozzarella cheese
  • 1 cup panko bread crumbs
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup all purpose flour
  • 2 eggs
  • 1 cup marinara sauce
  • fresh basil leaves and sliced thin for garnish

Instructions

  • Preheat air fryer to 360 for 5 minutes.
  • Use a sharp knife to cut a deep slit into each chicken breast lengthwise. Stuff each pocket with one slice of cheese (cut in half) and whole fresh basil leaves. Use toothpicks to secure the open edges closed.
  • In a shallow bowl, add bread crumbs, Italian seasoning, garlic powder, Parmesan cheese, salt and pepper. Mix well. In a separate shallow bowl add flour. In a third shallow bowl, add 2 eggs and beat well.
  • Dredge the chicken into the flour, followed by the egg and finally the panko bread crumb mixture. Make sure to evenly coat both sides. Place chicken into air fryer basket.
  • Cook chicken at 360 degrees for 20 minutes. When cooking cycle is complete, top each breast with sauce and one slice of cheese (you may need to cut in half). Continue to cook for 1 additional minute until cheese is melted.
  • Remove and sprinkle with fresh chopped basil before serving.
