- 3/4 teaspoon salt

- 3 tablespoons grated parmesan

Instructions

How to Cook Air Fryer Zucchini Step by Step

Gather the ingredients: Gather all the ingredients together and preheat the air fryer to 400°F.

Season the zucchini: Slice 4 medium zucchinis into ¼-inch coins and add them to a large bowl. Drizzle 2 tbsp olive oil over the zucchini and add ¾ tsp salt, ½ tsp garlic powder, ½ tsp onion powder, and ¼ tsp black pepper. Toss to fully coat the zucchini.

Prep the air fryer: Lightly coat the air fryer basket with nonstick spray, then arrange the seasoned zucchini in a single layer. Sprinkle 1–2 tablespoons of grated Parmesan over the top for that irresistible cheesy crust.

Cook the zucchini: Cook the zucchini in the air fryer for 8-10 minutes, until they’re tender and the edges are nice and crispy.

Finish and serve: Sprinkle 1 more tbsp of Parmesan cheese over the zucchini before serving. Enjoy!

If I have any leftovers, I store them in an airtight container in the fridge for up to 3 days. To reheat, I just pop them back in the air fryer for a few minutes at 375°F until they’re warmed through and crispy again.
