Blackened Catfish Recipe

This recipe is a quick and easy southern catfish recipe. Restaurant-quality blackened fish is easy to make at home and I love that catfish is inexpensive compared to other fish.

What To Serve With Catfish

Here are some of my favorite sides to serve with catfish.

What Is Blackening?

Blackening is a Cajun and Creole way of cooking fish or meat. The fish or meat is coated in spices heavily and then cooked in a very hot cast iron pan until it develops a charred surface. Blackened food has so much flavor and it can be a little or a lot spicy.

The blackening seasoning I use for this recipe is a wonderful combination of paprika, salt, onion powder, garlic powder, black pepper, celery salt, thyme, oregano, and cayenne pepper.

How Spicy Is This Recipe?

With a teaspoon of cayenne pepper in the blackening seasoning, this fish has a fair amount of heat but isn’t overly spicy. Reduce the cayenne in half if you don’t want it to have much heat.

How To Tell When Catfish Is Done

Catfish is done when it turns opaque throughout and flakes easily. Careful not to overcook it or it will be dry.

Equipment

Ingredients

Comeback Sauce

  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 2 teaspoons Texas Pete
  • 1 teaspoon honey
  • 1 teaspoon Worcestershire sauce
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Blackening Rub

  • 2 tablespoons paprika
  • 1 teaspoon kosher salt
  • 2 teaspoons onion powder
  • teaspoons garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon celery salt
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon cayenne pepper

Remaining Ingredients

  • 2 to 3 catfish fillets
  • 6 tablespoons melted butter
  • 1 tablespoon vegetable oil
  • lemon wedges

Instructions

  • Make Comeback Sauce. Stir together all ingredients in a small bowl. Cover and refrigerate until needed.
  • In a small bowl, stir together all spice rub ingredients.
  • Pat catfish dry with paper towels. Drizzle 2 tablespoons of the melted butter on the catfish.
  • Sprinkle top of fillets with blackening seasoning. (Note: you will not use all of the blackening seasoning.)
    Drizzle 2 tablespoons of the melted butter on the catfish.
  • Heat a cast iron pan over medium-high heat until very hot. Add about 1 tablespoon of vegetable oil to the skillet .
  • Place catfish, seasoned side down in pan. Cook for about 3 minutes and then flip over. Continue to cook until fish is cooked through (it will be opaque all the way through and it will flake easily.)
  • Serve catfish with Comeback Sauce and lemon wedges.

Notes

You can use another hot sauce in place of Texas Pete.
