Variations on Cream Peas

You can also add a tablespoon or two of cream cheese for an even thicker creamed pea sauce, and some garlic powder, onion powder, or dried herbs for more flavor.

How to Store and Reheat

Store leftover creamed peas in an airtight container in the refrigerator for up to 3 days. Reheat in a saucepan set over medium-low heat or in the microwave at 50% power in 30-second increments until warmed through.

I do not recommend freezing these peas, as the sauce will separate once thawed.

Ingredients

  • 2 tablespoons unsalted butter (¼ stick)
  • 2 tablespoons all-purpose flour
  • 2 cups half-and-half
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon granulated sugar
  • 20 ounces frozen peas

Instructions

  • In a medium saucepan, melt the butter over medium heat. Once melted, sprinkle over the flour and whisk to combine.

  • Slowly whisk in the half-and-half until combined. Whisk in the salt, pepper, and sugar.

  • Bring the mixture to a low simmer and cook until the mixture can coat the back of a spoon, about 2-3 minutes.
  • Stir in the peas and continue to cook until they are warmed through.

Notes

  • In place of the half-and-half, you can use whole milk or heavy cream.
  • If using canned peas, drain and rinse thoroughly and add only during the last few minutes of cooking to keep them from turning mushy.
  • If your peas are too thick, stir in a little milk or chicken broth, a tablespoon at a time, until thinned. If they’re too thin, stir in a little heavy cream.
