Banana Cake with Cream Cheese Frosting

Banana Cake with Cream Cheese Frosting is a fairly dense banana cake, much like banana bread, with some chocolate chips and a light and luscious cream cheese frosting with just the right amount of sweetness.

Have some overripe bananas lying around? Instead of making banana bread, try this Banana Cake with Cream Cheese Frosting and Sugared Walnuts. It’s sweet, moist, and studded with mini-chocolate chips.

Topping it off is a thick and creamy frosting and some sugared walnuts. It’s sure to be a family favorite. This recipe was previously posted on my old blog, Fort Mill SC Living. I don’t update it very often anymore so I’ve decided to gradually start reposting my favorite recipes here. It’s too confusing to have them in 2 places! And this recipe is one of my favorites.

Use Overripe Bananas

Be sure to use really ripe bananas. You know the ones that have more black than yellow. We have a lot of those around our house and since they’re not very pleasant to eat plain when they’re that ripe, I do tons of baking with bananas. I’ve made Banana Pudding Bars, Banana Pudding Cupcakes, Bananas Foster Cake, and Banana Bread with Chocolate Glaze.

If your bananas become overripe before you are ready to bake with them, peel them, wrap in plastic and freeze them.

Measure The Flour Correctly

When making a cake it is very important to measure the flour correctly. Too much flour will produce a dry cake. First fluff the flour up some in the bag or container you store your flour in. With a large spoon, gently scoop the flour into a dry measuring cup. Run the back of a knife across the top to level it off and get rid of any excess.

How To Store

Store in the refrigerator for up to 5 days or individually wrap pieces of cake and freeze for up to 2 months.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup white sugar
  • 1/2 cup firmly packed brown sugar
  • 2 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup mashed overripe bananas
  • 1/2 cup mini-chocolate chips

Cream Cheese Frosting and Sugared Walnuts

  • 8- ounce package of cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts
  • 1/4 cup brown sugar

Instructions

  • Preheat oven to 350 degrees. Spray a 9×13-inch baking dish with Baking Spray with Flour.
  • In a large bowl, whisk together the flour, baking soda, and salt. Set aside.
  • Using an electric mixer fitted with a paddle attachment, beat butter and sugars at medium speed until light and fluffy, about 3 minutes. Add eggs one at a time. Turn mixer off and scrape sides of bowl with a rubber spatula.
  • With mixer on low-speed, add sour cream and vanilla. Add banana and once incorporated, remove bowl from mixer and hand stir in flour and chocolate chips.
  • Pour batter into prepared pan and bake for approximately 25 minutes or until toothpick inserted in middle comes out with just a few moist crumbs attached. Transfer pan to wire rack to cool.
  • For frosting, using an electric mixer with a paddle attachment beat butter and cream cheese until smooth.
  • Gradually add powdered sugar and then vanilla extract.
  • To make walnuts, place walnuts and sugar in a small heavy-bottomed saucepan over medium heat. Stir constantly. After a few minutes, the sugar will begin to liquefy and coat the walnuts. Be careful not to let the mixture burn at this point. Keep stirring until the walnuts are well coated. Remove from heat and spread on a piece of parchment paper to cool.
  • Remove cake from pan by lifting the edges of the parchment paper. Spread cake with frosting and top with sugared walnuts.

Notes

Be sure to use overripe bananas for this recipe. You will need 2 medium to large bananas. They should have lots of black spots on them.
Cake can be stored in the refrigerator for 5 days.
