How to Make Cajun Chicken Pasta

  1. Cook the pasta al dente, according to package instructions.
  2. While the pasta cooks, cook the onion and bell pepper in a skillet then stir in the seasoning and add the chicken.
  3. Add in the cream sauce ingredients and simmer.
  4. Add in the pasta, stir and garnish.

What kind of chicken should I use?

I like to use boneless, skinless chicken breast. But you could use chicken thighs, they may take a bit longer.

Can I use pre-cooked chicken?

Yes! Feel free to use pre cooked chicken.

Can I make this pasta without chicken?

Absolutely! For a vegetarian cajun pasta, use any combination of your favorite diced or sliced veggies like zucchini, squash, mushrooms, carrots, additional bell peppers, etc. Add veggies to the recipe in step 2 and skip cooking the chicken. Continue with the recipe as written.

What is cajun seasoning?

Ingredients

  • 12 ounces rotini pasta
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • ½ onion diced
  • 1 green bell pepper diced
  • 3 cloves garlic minced
  • 1 tablespoon cajun seasoning
  • 1 teaspoon kosher salt
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • ¼ cup low-sodium chicken broth
  • 15 ounces fire-roasted diced tomatoes 1 can
  • 4 ounces cream cheese room temperature, cut into small cubes
  • 1 cup heavy cream
  • 3 green onions chopped

Instructions

  • Cook the pasta to al dente according to package directions. Drain and rinse with cold water. Set aside.

  • While the pasta cooks, melt and combine the butter and olive oil in a large skillet set over medium heat. Add the onion and bell pepper. Cook for 2-3 minutes until translucent.

  • Stir in the garlic, Cajun seasoning, and salt. Add the chicken and cook for 6-8 minutes or until the chicken is cooked through.
