Can you use fresh corn in creamed corn?

If you are serving this for Thanksgiving or Christmas, fresh corn is out of season, so frozen corn is your best bet. In a pinch you can use canned corn, just drain and rinse it before cooking.

How long does homemade creamed corn keep?

Once made, allow the corn to cool fully before covering and keep refrigerated, it will keep well for 3 to 5 days in the fridge. Reheat it on the stovetop to warm it through to serve.

Can you freeze creamed corn?

Ingredients

  • 24 oz frozen corn or two 15.25 ounces canned corn
  • ½ cup evaporated milk
  • ¼ cup heavy cream
  • 5 oz cream cheese cubed
  • 3 tablespoons butter
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions

  • Combine all the ingredients into a small pot, stir to combine.
