Easy Broccoli Salad Recipe

As the weather gets warmer, my mind turns to cookouts and salads, and this cheesy broccoli salad is a great addition to any feast.

Loaded with fresh vegetables and a creamy, sweet and tangy dressing, it’s a great versatile side dish that’s super delicious!

How to make Cheesy Broccoli Salad

  1. Cut up the vegetables and place into a bowl.
  2. Add in the cranberries and cheese.
  3. Mix together the mayo and sugar.
  4. Mix the mayo mix into the vegetables.
  5. Garnish with bacon, if you like, to serve.

How long does it keep?

Once you have made your cheesy broccoli salad, cover it and keep it in the fridge. It will keep well for 3 to 4 days.

Because this broccoli salad contains mayonnaise, don’t leave it at room temperature for more than a couple of hours.

Can you make it creamier?

This broccoli salad does have mayo, but it’s not swimming in it. If you prefer yours creamier, feel free to add in extra. You could also add in some sour cream or Greek yogurt if you like.

What can you serve it with?

This cheesy broccoli salad is great with grilled meats, seafood and chicken. It’s also pretty hearty and filling, so you can enjoy it by itself for a healthy lunch. Try it with:

  • Cut the veggies into small and even pieces so that everything combines evenly.
  • I prefer to use a full fat mayonnaise, but you can use a low fat one.

Ingredients

  • 1 head broccoli cut into 1 ½-inch pieces (about 2 cups broccoli)
  • ½ orange bell pepper diced
  • 1 stalk celery diced
  • ½ medium carrot diced small
  • ½ cup frozen sweet peas
  • cup dried cranberries
  • 2 Tablespoons red onion chopped
  • 1 cup sharp cheese cubed
  • ¾ cup mayonnaise
  • 1 ½ Tablespoons granulated sugar
  • 1 Tablespoon red wine vinegar
  • Cooked and crumbled bacon for garnish optional

Instructions

  • Cut up the broccoli, bell pepper, celery, peas, carrot and red onion and put them in a salad bowl.
  • Add the dried cranberries.
  • Cube the cheese.
  • Mix together the mayonnaise, red wine vinegar and sugar.
  • Mix the vegetables, dried cranberries, cheese, and mayonnaise mixture together.
  • Garnish with bacon (optional) and serve.
